Chicken Satay

INGREDIENTS


1-½ kg chicken
deboned and cubed
1 tsp cumin
1 tsp coriander seeds
2.5cm turmeric piece
2 tsp roasted peanuts
Salt, to taste
1 tsp sugar
½ tsp powdered cinnamon
8 shallots, diced
1 stalk lemon grass
2 tbsp cooking oil


 

METHOD

Grind the coriander, cumin, turmeric, peanuts, salt and sugar together. Mix this with powdered cinnamon, shallots and a tsp of cooking oil. Marinate the chicken with this mixture. Thread the meat on to skewers. Cook over a coal grill, occasionally basting it with oil using the crushed lemon grass. Turn over and continue to grill until the chicken is cooked.
