Grind the coriander, cumin, turmeric, peanuts, salt and sugar
together. Mix this with powdered cinnamon, shallots and a tsp of cooking
oil. Marinate the chicken with this mixture. Thread the meat on to
skewers. Cook over a coal grill, occasionally basting it with oil using
the crushed lemon grass. Turn over and continue to grill until the
chicken is cooked.
