6 kingfish steaks
250 gms vermicelli noodles
1 red onion, thinly sliced into rings
1 yellow courgette, sliced
125 gms shitake mushrooms sliced
5 dried mushrooms, havled
15 ml orange juice
1 tbsp soy sauce
2 red chillies, seeded, chopped
125 gms snow peas, halved lengthways
1 bunch coriander, coarsely chopped
Oil
Salt, to taste
METHOD
In a saucepan, place the
noodles and pour boiling water over them. Leave to soak for 5 minutes or
until soft. In a dish, marinate the fish with oil and salt. Heat oil in
a frying pan and cook the fish for 3-4 minutes on each side. Keep aside.
Meanwhile, heat 2 tbsp oil in a wok and stir-fry the onion, courgette
and mushrooms for a couple of minutes. Add the orange juice, soy sauce
and chillies and bring to the boil. Then add the drained noodles and
snow-peas, cover and cook for a couple of minutes to heat through. Spoon
noodles onto a serving dish, top with the king fish and Serve
immediately, garnished with coriander.
