Saffron Rice

INGREDIENTS

50 gms onions, sliced
2 cardamoms
4 cloves
1 tbsp cumin seeds
1 tbsp coriander seeds
4 tsp ginger-garlic paste
15 gms carrots, chopped
15 gms cauliflower florets
15 gms beans, chopped
200 gms rice, soaked for 15-20 minutes
A few strands of saffron
Salt, to taste
Hot water, to cook

 

METHOD

In a pan, heat the oil and fry the onions, cardamoms, cloves, cumin and coriander. After a while, add the ginger-garlic paste and fry till the mixture turns brown. Add the vegetables, soaked rice, salt and saffron and fry. Add boiling hot water till it is half an inch above the rice level. Cook until done.
