INGREDIENTS

200 gms cottage cheese
150 gms wild strawberries
40 gms icing sugar
1 sheet gelatin
Juice of one orange
1/8 litre whipping cream
Juice of one lemon
Springs of mint, for garnish

METHOD


Carefully mix together the cottage cheese, wild strawberries, icing sugar and half the orange juice. Leave to rest for half an hour. Soften gelatin in cold water. Heat the remaining orange and lemon juice together, squeeze out the gelatin and dissolve in fruit juice. Whilst still warm, mix into cottage
cheese. Whip the cream and fold carefully into the mixture. Arrange the strawberry snow on plates and garnish with springs of mint.
